Spiced Roasted Caulflower Curry - Christmas Recipe to Share ( vegan friendly)
How to entertain a vegan at Christmas.
It is a battle to get my husband to eat cauliflower at the best of times. So I developed a recipe that would pack some flavour and colour. I have used a organic cauliflower, fresh ginger, home grown chilli and plenty of turmeric. The marinade packs a punch. You can add more salt to taste. Give it a go. Serve alongside your Christmas roast or turkey leftovers (for you meat eaters).
Bini's spiced roasted cauliflower
Ingredients
400g cauliflower organic
2 tbsp water
Masala marinade
3 cloves garlic peeled and chopped
20g piece of fresh ginger peeled and chopped
1/2 green chilli stalk removed and chopped
1/2 tsp turmeric
1/4 tsp chilli powder
1 tsp coriander and cumin powder
1/2 tsp garam masala
1/4 tsp salt (or to taste)
1 tbspn rapeseed oil
1/4 tsp black mustard seed - dry toasted
1/4 tsp cumin seed - dry toasted
80 g fresh tomatoes roughly chopped
2 tbpsn oil
1 tbspn tomato ketchup ( I used Heinz)
Method
Preheat the oven to 200C (fan assist)
In a oven proof dish, mix all the masala marinade together and liberally cover over the cauliflower.
Add the water to the base of the dish.
Cover the dish with foil.
Bake for 35-40min until a sharp knife can pierce through easily.
Cut into steaks and serve alongside your favourite dal, rice and raita or Christmas turkey leftovers:)
