Jammu Chicken Curry 

Story about the dish...

In 2008 I had the pleasure to undertake an epic 10000 mile trip discovering the diversity and excitement that is India. Exploring regional foods and variations and noticing wonderful new flavours in the traditional foods found in every city and village along the route.

 

One of the stand out dishes I tasted was cooked at a small shack perched on a roadside on my way to the Jammu area. The food was prepared by a chef who had basic kitchen equipment, a charcoal stove and large saucepan. My driver mentioned he wanted to stop for lunch at this restaurant because the food was good. I guess it’s the India’s equivalent of a truck stop. I opted for a chicken dish which was creamy, spiced and bursting with a depth of flavour I hadn`t previously tasted. The curry has left me with wonderful memories and the stop had one of the most amazing mountain views of the Himalayas. My take on this dish is 'Jammu Chicken' which I hope you enjoy as much as I do.

Ingredients free range chicken, Onions, Ginger, garlic, chillies, Tomatoes, lemon, kasuri methi, pomoegranate molasses,  double cream, rapeseed oil, salt, mixed blend of spices, coriander.
